Neuroscientists tell us that the sense of smell is directly connected via the olfactory bulb to the human brain's limbic system, those sub-cerebral elements which operate by activating the body's endocrine and autonomic nervous systems in response to various olfactory stimuli. The limbic system includes, among other members, the hippocampus, which is essential to the formation of long-term memories, the cingulate gyrus, which mediates autonomic functions such as heart rate and blood pressure, as well as attention and cognition, and the amygdalae, which play a central role in the processing and memory of our emotional reactions. To summarize in plain words, when we smell a scent, the brain quickly and vividly associates the scent with our memories and emotions.
